Business Spotlight: Trattoria di Carlo

Chef Carlo Pedone, the owner, takes great pride in this award-winning restaurant that bears his name.

As a child growing up in the restaurant business, Chef Carlo worked alongside his father at the Napoli Restaurant and Pizzeria in Burlington, Wis. He eventually decided to branch out on his own and opened Trattoria di Carlo in 2002. Within a short time, it became a popular destination for evening dining, business lunches, weddings and other events. There’s little wonder why it has earned a loyal following of customers who appreciate great food, friendly service and an inviting, comfortable setting.

At the core of di Carlo’s extensive menu are authentic Italian recipes that have been handed down through several generations of family members, especially Pedone’s grandmother. In the family’s tradition, “quality ingredients are always a vital part of all of our menu offerings,” explains Chef Carlo. “To that end, we even grow some of our own herbs and vegetables.”

He alluded to a small greenhouse situated behind the parking lot of the restaurant and additional gardens at his home. For this season alone, he estimates having put in more than 2,000 plants, some of which began sprouting in April.

“There’s nothing better than homegrown eggplant, or tomatoes that have been freshly picked for our kitchen staff to use in their cooking,” he shares. “These fresh garden plants add much to the authentic flavor of our most popular dishes at Trattoria di Carlo.” Perhaps that explains why his customers rave about the Chicken Marsala, the Pollo Saltimbocco, the Stuffed Peppers (Chef Carlo’s grandmother’s special recipe) and all of the seafood dishes (fresh seafood is delivered to the restaurant twice a week). And, according to Pedone, di Carlo pizza is by far one of the most popular choices.

Fortunately, there are many ways to enjoy the food at Trattoria di Carlo. You can choose to dine in the restaurant’s main dining room, order your meal to go (and pick it up at the special “to-go” window at the back of the restaurant), or schedule private dining for your personal group.

Those who choose to dine at Trattoria di Carlo often comment on the “family feel” that permeates throughout the restaurant. According to Business Manager Amy Plennes, both diners and staff are treated like part of the family. This helps to create an atmosphere where guests can thoroughly enjoy themselves. “Our long-tenured staff, some of whom have been with us since day one, are valued and appreciated, and it shows in their performance,” says Plennes. “This truly is a great place to dine and work!”

Group seating is available, in both the main dining area and the private dining room. Plus, di Carlo offers on-the-go or full-service catering. Whether you are planning a business luncheon, birthday party, sit-down wedding or a corporate outing or family picnic, di Carlo’s staff can provide excellent food, plus take care of other needs like tents/tables/chairs, floral recommendations, skirting/ linens, and all the staffing. Another fascinating part of di Carlo’s business is in-flight catering through Milwaukee General Mitchell Field and Chicago O’Hare International Airport (among others). For more than 10 years, the business has provided in-flight catering to charter airlines and private and corporate jets. The Milwaukee Bucks, the Colorado Rockies, the Minnesota Timberwolves and other national sports teams enjoy Trattoria di Carlo food as much as Oak Creek residents!
